Thai Chicken Satay

Ingredients

1 Can Coconut Milk

2 Tbsps. Red Curry Paste

2 Tbsps. Cider Vinegar

1 Tbsp. Dark Soy Sauce

1 Cup Sugar

Water

1 Kg Chicken, cut into cubes

1 Tbsp. Salt

1 Tbsp. Sugar

1 Tbsp. Curry powder

1 Tsp. Red Curry Paste

½ Cup Coconut Milk

Vegetable Oil

To make the peanut sauce, heat a can of coconut milk in a sauce pan.

Then, add in peanut butter followed by red curry paste, cider vinegar, dark soy, sugar and some water. Whisk the mixture well and bring it to a simmer for about 5 minutes. Turn off the heat and transfer the sauce in a bowl. Sprinkle some crushed roasted peanuts on top.

Take a bowl of chicken pieces and add in salt, sugar and curry powder. Next, add in a teaspoon of red curry paste and half a cup of coconut milk. Mix and combine well using a spatula.

Leave it for at least 20 minutes, 3 hours or even overnight. The longer you keep, the more flavoursome the satay will be.

Once the marination process is completed, thread the chicken pieces onto the wooden or metal skewers and shallow fry or grill them in a grilling pan. Serve the chicken satay with peanut sauce
