Stuffed Potato Pancakes – Draniki

Ingredients

One 1/2 lbs yukon gold potatoes, peeled (5 to six medium potatoes)

One medium onion peeled

One big egg

Three Tbsp all-purpose flour

One Tbsp cream and more to serve

One tsp salt or to taste

1/8 tsp black pepper or to taste

Three Tbsp vegetable oil (or other cooking oil)

1/2 pound ground pork (or ground chicken or turkey)

1/4 tsp salt and pinch of black pepper

Instructions

Into a big bowl, grate all of your peeled potatoes using the star grater side of a box grater (protect your hands with safety gloves!)

Within the same bowl, grate the medium onion on an equivalent star-grater aspect of the box grater (no use to wash the grater). Reserve and put aside one Tbsp of the grated onion for your meat mixture.

Into the potato and onion mix, add one big egg, three Tbsp flour, one Tbsp soured cream, one tsp salt and 1/8 tsp black pepper. Stir to mix and put aside.

In a medium bowl, mix 1/2 pound ground meat, 1/4 tsp salt, pinch of black pepper and reserved one Tbsp grated onion. Mix just till well combined.

Heat an oversized non-stick pan over medium heat with 2-3 Tbsp oil. Once oil is hot, add potato mixture one Tbsp at a time, flattening out the top with the rear of your spoon.

Instantly top every cake with a meat patty and cover each with another Tablespoon of potato mixture.

Saute four minutes per aspect or till cooked through and golden brown.
