Stir-fried Noodles-1

Ingredients

225g Flat Noodles (Kuey Teow)

75g Mung Bean Sprouts

4 Pieces Prawn (Cleaned, de-shelled and deveined prawn)

3 Pieces Fried Fish Ball

15 pieces Cockles

1 Egg

1 Clove Garlic (finely chopped)

1 Tsp. Oil

½ Tsp. Dark Soy Sauce

1 Tsp. Light Soy Sauce

½ Tsp. Salt

1 Tsp. Chilli Paste

Dash of Pepper

Instructions

In a bowl, take 15 pieces of cockles and pour boiling water into it. Stir and transfer the cockles to another bowl and remove the shells one by one.

Then, cut 3 pieces of the fried fish ball into slices. After that, heat 1 tablespoon of oil in a pan and add 1 finely chopped garlic clove.

Next, add the fried fish ball slices and de-shelled prawns and fry until cooked. Then, add the flat noodles (Kuey Teow). Stir and loosen the noodles.

Next, add ½ a teaspoon of dark soy sauce, 1 teaspoon of light soy sauce. Mix it well.

Next, add 75 grams of bean sprouts and stir-fry for 2 minutes. Then, add 1 teaspoon of chilli paste and mix it again gently.

Now, make space in the middle and add ½ a teaspoon of oil, a raw egg, ¼ teaspoon of light soy sauce over the egg, 1/8 teaspoon of pepper and mix it together.

Next, add the cockles and mix again. Add ½ a teaspoon of salt and stir-fry for another 30 seconds. Once it is ready, serve it hot.
