Italian Baked Eggs
300g Spicy Sausages, chopped
400g Whole Tomato, canned
½ Red Onion, chopped
1 Garlic, chopped
1 Tsp. Chilli Flakes
1 Tbsp. Honey
1 Tbsp. Tomato Paste
Parmesan, Sugar, Salt and Pepper as much needed for seasoning
First, preheat your oven 180⁰ C for 15 minutes. Meanwhile, heat some oil in a pan on low heat and sauté the chopped red onions.
Then, add the sausages, chilli flakes and chopped garlic. Mix and cook until the sausages turn slightly brown. To this, add some salt to taste, canned tomato sauce and stir through.
Next, add 1 tablespoon of tomato sauce, 1 tablespoon of honey and then season with pepper.
Once done, create craters in sauce and then fill in with raw eggs. Top it with grated cheese and then bake it in the oven for about 15 minutes.
After 15 minutes, remove from the oven and serve it hot.
