Chicken Afritada

Ingredients

1 Kg Mixed Chicken Legs & Thighs

2 Potatoes (sliced)

2 Carrots (roll cut)

1 Red & Green pepper (1 each)

2 Pcs. Chicken Liver

4 Cloves of Garlic (minced)

2 Onions (chopped)

2 Tomatoes (sliced)

1 Regular-sized Tomato Sauce

1 Cup Water or Chicken Stock

½ Tbsp. Salt

½ Tbsp. Sugar

Instructions

Cut this chicken into serving pieces and put into a bowl. Season it with salt and crushed pepper. Mix it well.

Now, peel off 2 potatoes and slice them off. Soak the potato slices in water for 30 minutes to remove excess potato starch. After half an hour, remove the potatoes from water and shake off the excess water. Fry the potatoes and set aside for later.

Next, peel off the carrots and roll cut into smaller pieces. Fry them as well and set aside.

Then, chop off the red and green bell pepper. Remove the inner flesh as gives a bitter taste. Fry and set aside.

Next, fry the chicken pieces until slightly brown. Once fried, set aside the chicken. Then, take the chicken liver and fry it on low heat. Set it aside.

Now, sauté the minced garlic cloves and chopped onions until brown and tender. To this, add chopped tomatoes and cook for a couple of minutes.

Next, add in the chicken liver spread. Later, add in the chicken pieces and tomato sauce. Mix everything together.

Now, add in 1 cup of water or chicken stock. And give it a good stir. Bring the chicken dish to a boil. Add salt and sugar to taste. Stir it occasionally and simmer for another 7-10 minutes.

Lastly, add in the fried veggies and then, simmer for another 3-5 minutes.
Your chicken afritada is ready to serve.
