Beef and Broccoli Stir Fry

Ingredients

One pound beefsteak very thinly sliced into bite-sized strips

Two Tbsp olive oil (or vegetable oil)

One pound broccoli

Two tsp sesame seeds optional garnish

One tsp fresh ginger grated (loosely packed)

Two tsp garlic grated (from three cloves)

1/2 cup warm water

6 Tbsp low sodium soy sauce

Three Tbsp packed brown sugar

One 1/2 Tbsp corn starch

1/4 tsp black pepper

Two Tbsp sesame oil

Instructions

Prep: begin cooking rice 1st therefore it’s prepared once the fry is finished. Cover and freeze steak half-hour for easier slicing.

Mix all fry sauce ingredients during a bowl, stir well to dissolve the sugar, and put aside.

Place a large frypan over medium heat and add one Tbsp oil.

Add broccoli florets and sauté 4-5 minutes, partly coated with lid, stirring or tossing many times till broccoli is bright green and crisp-tender then remove from pan.

If you like softer broccoli, add two Tbsp water before covering with the lid and it’ll steam cook the broccoli.

Increase heat to high heat and add one Tbsp oil. Add beef during a single layer and sauté two minutes per side or just until cooked through. Quickly pull out a chunk to test for doneness.

Add the sauce, reduce heat to medium/low and simmer 3-4 minutes. It’ll thicken. Add broccoli and stir to mix. Stir in 1-2 Tbsp water to thin the sauce if desired. Serve over rice.
